DB Bistro Moderne

DB Bistro Moderne, one of the Celebrity-Chefs' restaurant at Marina Bay Sands, is a modern French-American restaurant. It was a Sunday and very crowded in most of the restaurant. In the end we choose DB Bistro Moderne because they told us they have table of 5 for us. We were tired and hungry so without 2nd thought, we just fine to settle here.

DB Bistro Moderne is owned by Daniel Bouluds, a three Michelin star Relais & Chateaux. His Manhattan restaurant 'Daniel' is considered one of the 10 best in the world.

They sell lot of different wines and liqueur. You can choose any or ask for recommendation to go with your meal. The staffs are friendly and services are good.







The complimentary bread basket served before the main course was fresh and very delicious. I dun know what butter that use but I love it. I dun really like the butter because it always taste oily and I feel not comfort when my mouth is oily. However, this butter will not have that problem and it smells good.

Grilled Boston Scallops & Tiger Prawns($44++) serves with Green & White Asparagus, Sugar Snap Peas, Lemon Hollandaise. I tried only the scallop and it is really fresh.

Scottish Salmon($38++) which have French Peas, Bacon, Baby Carrots  Lemongrass Beurre Blanc. This is good, the salmon was fresh and I did not taste the fishy smell. It tasted good with pea sauce.



Duo of Organic Yellow Chicken($42++) baked with Bluefoot Mushrooms, Spring Vegetables, Albufera Sauce. I did not taste this dish but my friend said it was special and taste good.




HANGER - 8oz 1824 Wagyu, Australia($5++2). You may choose Pommes Frites or Gratin Dauphinois for the side dish and Béarnaise or Red Wine & Shallot for the sauce. Pommes Frites is french fries, so I am thinking to try out the different one. I took the Béarnaise sauce as I had tried Red Wine sauce before. Béarnaise is a sauce made of clarified butter emulsified in egg yolks and flavored with herbs. I love the steak. I get myself medium well, it is really nice and the taste are so good. I think they just use salt. I can just eat without the sauce. 



I chose Gratin Dauphinois, sliced, thin potatoes arrange into few layers and baked with cheese. It is a popular recipe coming from the French Alps. The version of DB I think I dun taste much cheese, instead I tasted more cream and milk. It tasted great.



We were served with complementary Warm Madeleines($8 for ala-carte order) and that is really nice. I had more than 5. It smelled orange, crispy and hot. I love it.



CLAFOUTIS TOUT CHOCOLAT($15++) - Warm Flourless Chocolate Cake, Chocolate Sorbet, Vanilla Ice Cream. This can be better, the chocolate smell is not that strong and ice-cream are just average.


Overall, the dining experience is great. May be next time can consider trying their famous burger - The Original DB Burger ($38++) with Sirloin Burger Filled with Braised Short Ribs & Foie Gras, Served on a Parmesan Bun
