Steamed Brinjal with Olive Vegetables


Ingredients:-
2 chinese eggplants
3 cloves garlic, finely minced
3 small red chilis, chopped (optional)
2 tbsp of olive vegetable(in bottle)
2 tbsp spring onions
2 tbsp of minced meat
1 tbsp of soy sauce

Methods:-

1. Wash and cut the eggplants to 2 1/2 inch lengths, discarding the stems.  Place eggplants into plate.

2. Stir fried olive vegetables with the garlic and chilis (if using) over medium heat until garlic is a golden brown. Add in the minced meat and stir friend until it is half cooked. 

3. Carefully pour the ingredient (2) onto the (1).   Pour the soy sauce over the eggplants and placed into  steamer and steam for 25-30 minutes until really soft.  

4. Last, sprinkle with spring onion and serve.

***Tips***
1. From experience, I found olive vegetable already has oil in it, so to avoid for oily dish, I did not add additional oil to cook for the dish.
